How to make sure the old exchange server is turned down properly?

The Background: In the last year we have introduced Exchange 2010 and virtualization. I kept Exchange off of virtualization until now because I wanted to make sure everything was running right. I loaded exchange on a physical machine and it currently is running CAS, HT, and Mailbox roles.

The physical server is running Windows 2008 R2 SP1 with Exchange 2010 SP3

I have built two identically servers on VM and installed Exchange 2010 SP3.

Is there a step by step way of turning down the first exchange server so that services don't stop? Or is there a way I can test to make sure exchange functionality is running correctly on the second server?

And because of my pain in the rear firewall service, can I reset the IP address on the second exchange server to the first exchange servers address as long as I pay due diligence to DNS and my MX records?
