Remote sights best practice for Scan to Email

Hello,

I've read a few threads about this but wanted to look for more information. We have remote staff that work out of satellite offices or AT&T sites where we rent the space and use their resources. Many sites want to use copier/scanners to scan to email documents.

We have Exchange 2010 SP2. I know the process to create a receive connector ( example here http://zahirshahblog.com/2010/08/14/14-august-2010-1624/) and only allow their remote IP to relay, but I really dislike this solution. It seems very risky to allow anonymous relay from outside the domain. Plus some sites have the public IP change on them from time to time. Does anyone know of any options  or alternate solutions for this process? I have read about creating a mailbox account to associate to each printer /scanner , and then using POP but that seems hokey too.
