Restore Mailbox after deleting exchange 2003 servers

Hello,

Is it  possible to restore a mailbox after removing exchange 2003 from our organization. I have dismounted all the stores and took a backup of the databases and logs.   If this is possible, do you have any articles or instructions on how to do a recovery of a mailbox after exchange 2003 has been removed from our organization. This is needed in case we need to do a restore in the future ?

We are in the process of deleting exchange 2003 servers from our organization as we have moved most of the users to exchange 2010 and only a few resource mailbox left.
