Exchange 2010, 2007 Coexistance

Ok so maybe someone can help me save my job.....

In the process of migrating 2007 Exchange to 2010 i have a few questions, which i am sure there is an answer out there but figured someone can help me out it the most simplest way possible. This is what i did so far:

Exchange 2007 online
Installed Exchange 2010 w SP3
Ran all Schema, AD Prep etc...

Exchange installed just fine with the CAS, HUB, MBX roles

When i open the EMP I can see all of my Exchange 2007 mailboxes, hub transport rules etc.....

Question is how do i initiate the Autodiscover and mailflow to those boxes that are moved to the new 2010 server?
I have to run the Certificate request on the CAS and here is my big problem:

When microsoft mentions LEGACY name is that the name of the 2007 server or do I have to use the word LEGACY then in my DNS Create a record names LEGACY and point it to the 2007 Box? WHat about external DNS?

My guess i have to use the following names in my SAN Cert (tell me if i am right)

Example:

ServerA.domain.com - this is server 2010 FQDN
ServerB.domain.com - this is server 2007 FQDN
Autodiscover.domain.com - Web discovery
Webmail.domain.com - OWA, Outlook Anywhere, ActiveSync
Legacy.domain.com - ? should it be here as well?

And the million dollar question what happens to the users OUTLOOK is the profile that is configured and the server name is the old 2007? When i move the mailbox will it move the outlook profiles server address to the new server?

*I have a Office ADMX that states to pull user address based on SMTP address.....
